Avocado Pesto Linguine

Yesterday I cooked the most yummiest dinner. I thought I'd share the recipe with my blog buddies as its so easy.
So to make this yumminess for four lucky people you need...
400g dried linguine
2 ripe hass avocados
2 cloves of garlic, peeled.
Juice of half a lemon
20g of fresh flat leaf parsley
80g of fresh basil
1 red chilli
2 tbsp olive oil
50g grated Italian hard cheese
25g toasted pine nuts
*1 pack pancetta* optional

Right....
Cook the pasta and when done drain reserving about 3 tablespoons of the cooking liquid. Cover the pan to keep warm.

Meanwhile, make the pesto: cut the avocados in half length ways and chuck the stone. Peel the skin. Place the avocado, garlic, lemon juice, herbs, chilli, olive oil and half the cheese in a food processor. Blend until smooth. If you want to go for the meat option, pan fry the pancetta for 2 minutes and add to the blended pesto.



Stir the pesto into the pasta and serve immediately, sprinkled with the remaining cheese, pine nuts and black pepper.
